Granary Thyme Scones

These soft aromatic scones are great served with soup and salads.

Serves: Makes 12recipe
Preparation time: 30 Minutes
Cooking time: 10 Minutes

Ingredients

    125g self-raising flour
    1 teaspoon baking powder
    a pinch of salt
    125g granary flour
    50g butter, plus extra for greasing

    2 teaspoons chopped thyme or a teaspoon dried thyme
    2 tablespoons milk
    1 medium size egg, beaten

Method
Preheat the oven to 220°C, 425°F, gas mark 7.
   
Sift the self-raising flour with the baking powder and salt. Mix in the granary flour.
   
Rub the butter into the flours and stir in the thyme. Add the milk and egg to make a soft dough.
   
Roll out to 1cm thick and cut into rounds. Place on a well greased baking tray and bake in the preheated oven for 10 minutes.
   
Cool a little and serve warm, heaped in a basket with sprigs of flowering thyme if you like.
