Fruity Flapjacks

Here's a great way to surreptitiously get everyone's day kicked off
right with filling whole grains and fruit antioxidants. Breakfast foods
provide a lot of opportunity for confusion over "wheat" vs. "whole
wheat" so always remember you want the "whole" thing! Add nuts and/or
substitute chopped nectarines for the grapes, if you like. And if you
prefer your syrup warm, gently heat the thinned fruit spread in a small
pot on the stove before serving.
Ingredients
1 1/3 cups 365 Everyday
Value® Organic 100% Whole Wheat Buttermilk Pancake & Waffle Mix
3/4 cup plus 3 tablespoons water, divided
1 tablespoon expeller-pressed canola oil
1 cup seedless red grapes, finely chopped
Cooking spray
1/4 cup 100% Fruit Spread, such as Wild Blueberry or Black Cherry
Method
In a large bowl, stir together pancake mix, 3/4 cup plus 1 tablespoon
water and oil until just combined; fold in grapes. Heat a large skillet
over medium heat. Spray with cooking spray and cook pancakes in
batches, using more cooking spray as needed. Use about 1/4 cup of the
batter to make each pancake and cook, flipping once, until cooked
through and deep golden brown, about 5 minutes; transfer to a plate. In
a small bowl, stir together fruit spread with remaining 2 tablespoons
water and spoon over hot pancakes.
