Father's Day Cakes

From Sainsbury's
Simple orange and lemon cakes, perfect for the kids to make and decorate.

Serves: makes 36 mini or 12 large cakesrecipe
Preparation time: 10 Minutes
Cooking time: 20 Minutes

Ingredients

    1 orange, peeled and pith removed, cut into segments – reserve any juice
    Grated zest of 1 lemon
    100g Sainsbury’s Fairtrade caster sugar
    1 medium free-range egg, beaten
    100ml Sainsbury’s buttermilk
    50g unsalted butter, just melted

    ½ teaspoon baking powder
    200g self-raising flour, sifted
    Icing sugar
    Lemon juice
    Various decorating icing coloured tubes

Method
Preheat the oven to 180°C, fan 170°C, gas 4 and line a mini-muffin tin with cases.
   
Finely chop the orange segments. Place the orange pieces and juice in a large bowl, then mix in all the remaining ingredients.
   
Spoon the mixture into the cases and bake in the oven for 15–20 minutes, or until risen and golden brown.
   
To decorate, stir the icing sugar with a little orange or lemon juice to a pouring consistency. Drizzle over the muffins and leave to set.
   
For a Father's Day surprise, use a range of coloured icing tubes to pipe the letters onto the cooked and cooled cakes. 

Cook's tip: If you don’t have a mini-muffin tin, spoon the mixture into mini cake cases and cook on a flat baking tray for 20–25 minutes.
