Dracula’s Slime Punch with Floating Eyeballsrecipe

Ingredients
    1 pack lime flavour jelly
    1 Galia melon, deseeded
    1 litre ginger beer
    Green food colouring (optional)
    8 radishes
    4 olives
    2 tbsp raspberry jam

Method
Pull the jelly into cubes, place in a bowl and microwave for 1 minute* on full power until the jelly dissolves. If you don’t have a microwave, place the bowl over a pan of simmering water.

Scoop out the melon and place the flesh in a food processor. Blitz until smooth then add the dissolved jelly in a thin stream with 200ml of the ginger beer and a few drops of food colouring, if using. Blitz again. Pour into a large jug and top with the remaining ginger beer.

Roughly peel the radish, leaving some of the red skin on. Slice a thin sliver off one end and, using a small sharp knife, scoop out enough of the radish to be able to push half a black olive into it. Drop these ‘eyeballs’ into the punch.

Drizzle the rim of 8 glasses with a little raspberry jam to form ‘Dracula’s blood’. Chill the glasses until ready to serve.
