Double Banana Loaf

Moist, sweet slices of cake with a chunk of banana in
every slice!

Ingredients
100g lightly salted butter, softened
125g demerara sugar
2 medium eggs, lightly beaten
1 1/2 teaspoons vanilla extract
50ml milk
200g self-raising flour, sifted
1/4 teaspoon ground cinnamon
3/4 teaspoon bicarbonate of soda
4 small ripe bananas, peeled
125g unsalted butter, softened
175g icing sugar, sifted
Edible glitter or sprinkles
Method
Preheat the oven to 190ºC, 170ºC, gas 5. Butter a 22cm long,
6cm deep non-stick loaf tin. Cream together the butter and sugar in a
food processor, or electric hand whisk, than add the eggs, 1 teaspoon
of the vanilla extract and milk. Don't worry if the mixture appears
curdled. Add the flour, cinnamon and bicarbonate of soda and whiz again
until creamy and smooth.
Mash three of the bananas then add to the cake mixture and fold
together. Spoon half the mixture into the tin, then cut the remaining
banana into thirds and lay at intervals on the mixture, gently pressing
to half-submerge them. Smooth the remaining mixture on top. bake for
about 1 hour or until a skewer inserted into the centre comes out clean.
Run a knife around the edge of the loaf and leave to cool for 10-15
minutes in the tin. Turn the loaf, the right way up onto to a cooling
rack. Leave to cool completely.
Beat the butter and remaining vanilla extract in a bowl with an
electric hand whisk in the icing sugar in batches. Spread over the loaf
and scatter with the glitter if using.
