Classic Mince Pies
From Sainsbury's
Crisp shortcrust pies filled with sweet mincemeat. Serve
warm with brandy butter.
Serves: makes 12
Preparation time: 15 Minutes
Cooking time: 15 Minutes
Ingredients
300g Sainsbury's shortcrust pastry
175g Sainsbury's luxury mincemeat
Zest of 1 lemon
1 egg, beaten
1 tablespoon caster sugar
Method
Roll the pastry out as thinly as possible on a lightly floured surface.
Using a cutter stamp out 12 rounds large enough to fit a 12 section
pattie tin.
Prick the bases and spoon a little mincemeat into each pattie. Add a
little lemon rind to each pie.
Re-roll the remaining pastry and stamp out 12 smaller discs or stars
and pop on top of the mincemeat.
Beat the egg and lightly brush the pastry. Sprinkle with a little sugar
and chill for 30 mins.
Pre heat the oven to 200°C, fan 180°C gas 6. Bake the pies for
12-15 minutes.
Serve warm with brandy butter.
