Christmas Spice Cranberry Cookies

Crisp seasonal cookies, ideal for afternoon tea over the
festive season.

Ingredients
125g unsalted butter
250g unrefined light soft brown sugar
2 medium eggs, beaten
40g raisins
40g dried cranberries
50g walnut pieces
350g plain flour, sifted
2 tablespoons Sainsbury's Christmas spice
1 teaspoon bicarbonate of soda
2 tablespoons icing sugar
Method
Preheat the oven to 190°C, fan 170°C, gas 5. Beat the
butter and sugar until pale and fluffy with an electric whisk then add
the eggs gradually.
Stir in the raisins, cranberries, walnuts, flour, 1 tablespoon of the
spice and bicarbonate of soda to make a dough.
Shape into walnut-sized balls and place, well spaced apart, on a
lightly greased baking tray, flattening each biscuit slightly.
Bake for 10-15minutes - the longer the bisuits are baked the more
crunchy they will be.
Remove from the tray and allow to cool on a wire rack Combine the icing
sugar and remaining Christmas spice and dredge the cookies before
serving.
