Beef and Polenta Lasagna

Prepare and cook in 35 minutes.
Ingredients:
1 lb lean ground beef (87%
lean)
1 (25 oz) jar Simply Enjoy Marinara Sauce
1 (18 oz) package pre-cooked polenta, cut into
1/4"
rounds
8 oz shredded reduced fat 4-cheese Italian
blend
1/4 cup grated Parmesan cheese
Method
Preheat oven to 425°F F.
Crumble beef and cook in a large heavy
nonstick skillet over medium-high heat. Cook and stir until beef is no
longer pink. Drain all pan drippings. Stir in pasta sauce and simmer
for 2 to 3 minutes.
Meanwhile, spray a 9-inch square baking pan with
non-stick cooking spray. Arrange a single layer of sliced polenta
rounds on bottom of pan. Cover with 1/2 of pasta/beef sauce. Sprinkle
with 1 cup Italian cheese. Repeat layers.
Bake uncovered for 15 minutes
or until bubbly. Sprinkle top with Parmesan and bake 5 more minutes.
Let rest 5 minutes before serving.
